This is a recipe that I created after seeing a bunch of posts about roasting cauliflower. I love Indian flavors that have a little sweetness with spice – Gujaratis are notorious for adding sugar to all of their savory dishes. This is a fun appetizer that has a slightly crispy texture. The sesame oil seems to blend the flavors a little bit better than olive oil but any vegetable oil will do. One head of cauliflower seems like a lot for just a few people but it shrinks down during cooking. My husband and I ate 1 cauliflower each when I first tried out this recipe.
Feeds 2-4 as an appetizer
Ingredients:
- 1 Head of Cauliflower
- 2 Tbsp Sesame Oil
- 1.5 – 2 Tbsp Sriracha pending spice level desired
- 1 Tbsp Curry Powder or Turmeric (I made my own curry powder with Coriander, Cumin, Turmeric, Cayenne, Cardamom, and Mustard Seeds)
- 1/2 tsp Garlic Powder
- 2.5 tsp sugar
- 1 tsp salt
Directions:
Preheat oven to 425 degrees. Toss the cauliflower florets in the oil and spices until coated. Place on a baking sheet for 40 minutes. Flip the cauliflower every 15-20 minutes to prevent too many burnt spots.
